Oats idli with Peanut Chutney...
Ingredients-
1 cup Rolled Oats
3 tsp Oil
1 tsp Mustard
½ tsp Urad Dal
1 tsp Chana Dal
½ tsp Cumin/Jeera
Few Curry Leaves
½ tsp Ginger paste
2 green Chillies, finely chopped
1 Carrot, grated
¼ tsp Turmeric
½ cup Rava/Semolina/Suji, coarse grained
½ cup Yogurt
1 cup Water
2 tbsp Coriander Leaves, finely chopped
¾ tsp Salt
7 Cashew, halved
½ tsp Eno Fruit Salt/Baking Soda
Method-
Firstly, in a kadai heat 3 tsp oil and splutter 1 tsp mustard, ½ tsp urad dal, 1 tsp chana dal, ½ tsp cumin and few curry leaves.
also, add ½ tsp ginger paste and 2 chillies. Saute slightly.
Further, add 1 carrot and ¼ tsp turmeric and saute for 2 minutes.
Now add ½ cup rava and roast on low flame until it turns aromatic.
Add powdered oats and mix well.
Transfer the mixture and allow to cool completely.
Add in ½ cup curd and ½ cup water.
Mix well making sure there are no lumps.
Further add 2 tbsp coriander leaves, ¾ tsp salt and ½ cup water.
Mix well making sure to form an idli batter consistency.
Rest for 20 minutes or until the rava absorbs water.
Just before steaming add a ½ tsp eno (fruit salt)/baking soda and mix well.
Steam the oats idli for 15 minutes on medium flame.
Finally, serve instant oats idli with peanut chutney and sambar (optional).
Roast the oats and rava on medium flame, else the idli will turn sticky and hard.
Furthermore, you can also prepare the batter before in hand and store in a fridge. Remember just before steaming add baking soda/eno.
Finally, steam the instant oats idli on medium heat to get the soft idli.
Peanut Chutney...
Ingredients-
¾ cup Peanuts
2 tsp Oil
1 tsp Urad Dal
1 tsp Chana Dal
2 cloves Garlic
1 Green Chilli
A small piece of Tamarind.
Salt to taste
½ cup Water, or as required
For Tempering-
2 tsp Oil
1 tsp Mustard seeds
1 tsp Urad Dal
Pinch of Hing/Asafoetida
1 Dried Red Chilli, broken
Few Curry Leaves
Method-
Firstly, dry roast ¾ cup peanuts on medium flame.
Roast till the peanuts start to separate the skin.
Allow to cool down and remove the skin completely.
Transfer the peanuts to the blender.
Further, add 2 tsp of oil and roast 1 tsp urad dal and 1 tsp chana dal.
Furthermore, roast 1 green chilli and 2 cloves garlic till the blisters appear.
Transfer to the blender.
Also add in the small piece of tamarind and salt to taste.
Blend to smooth consistency adding ½ cup water, or as required.
Now prepare the tempering by heating 2 tsp oil.
Also add in 1 tsp mustard seeds, 1 tsp urad dal, pinch of hing, 1 dried red chilli and few curry leaves.
Allow the tempering to splutter.
Finally, pour the tempering over peanut chutney and serve along with the idlis or dosas.
