Gajorer Payesh/Carrot Kheer...

Dessert is usually the last share of a meal, and is customarily sweet. The word dessert derived from French word commonly in practice during the 1539s ‘de-serve: desservir’ which means ‘to remove or eliminate what has been served on your plate’. The beginning of having sweet along with the main food in the Indian subcontinent can be traced back to 500 BCE. Therefore eating something sweet at the end of the meal has been a custom not only in India but also in the world, so here I present before you a very popular recipe of "Gajorer Payesh". This vegetable isn't liked by many, precisely by fussy kids like me but if prepared like this then it's gonna linger on your taste buds for a long time. This is a very nostalgic recipe of my grandmother who used to spoil me with these delicacies. Let's try our hands on this special recipe today.



Gajorer Payesh/Carrot Kheer... 
Ingredients-
Gajor/Carrots - 5 pieces, grated
Milk - 1ltr
Sugar - 1 cup (If you are using sweetened condensed milk then use less of sugar.)
Condensed Milk - 1/4 cup (optional)
Cardamom pods - 3, crushed into powder/whole (optional)
Cashew Nuts - 1/4 cup, unsalted, chopped Raisins - 1/4 cup
Ghee/Indian Clarified Butter - 4tsp
Method-
Heat 3 tsp ghee in a small wok. Add the cardamoms and the chopped cashews. Fry till golden brown. Add the grated carrots.


Stir it in the ghee till it turns slightly soft. Set aside. Boil the milk in a flat bottomed pan. Add the carrots when the milk comes to a boil. Add the cardamom, cashews, raisins, sweetened condense milk (optional). Lower the temperature and keep on stirring until the milk really thickens (this should take about 45 minutes to an hour). Add a tsp of ghee during the last 1 minute of stirring. Garnish with nuts.


Let the Gajorer Payesh/Carrot Kheer set for a while and refrigerate it. Serve it cold.
