Lau Chingri

Lau Chingri...
Ingredients-
1 Lau (Bottle Gourd)
250 grams Shrimps
1/2 teaspoon Cumin seeds
1 Bay Leaf
1 dry Red Chilli
2-3 Green Chilli
1/2 inch Ginger
1 teaspoon Turmeric powder
1 teaspoon Red Chilli powder
1 teaspoon Black Pepper powder
Salt and Sugar to taste
Mustard Oil
Method-
Marinate the shrimps with salt and turmeric powder for 10 minutes then lightly fry them in mustard oil for 2 minutes. To the same kadai add the cumin seeds, bay leaf, dry red chilli and green chillies followed by the grated ginger. Saute them for few minutes and add the lau. Add salt, sugar, turmeric powder, red chilli powder and black pepper powder. Cover and simmer till the bottle gourd losses all its water and is cooked completely. Add the shrimps and simmer for five more minutes. Serve Lau Chingri along with steaming hot rice.
