Lau ar Khola Bata/Bottle Guard Peel Bharta...
Ingredients-
1 cup peel of Lau (Bottle Gourd), boiled
3 Garlic cloves
1/2 cup Coriander leaves
2 Green Chilli
Mustard Oil
1 Onion, chopped
1/2 tsp Kalojeera (Kalaonji / Nigella seeds / Onion seeds)
Salt and Sugar to taste
1 dry Red Chilli
1/2 tsp Turmeric powder
1/2 tsp Red Chilli powder
1/2 tsp Black Pepper powder
Method-
Boil the peels in sufficient water till soft or pressure cook for 2-3 whistles. Grind it along with coriander leaves, garlic & green chillies to a smooth paste. Heat oil in a pan and temper with kalonji and dry red chilli. Add the onion and saute till light brown. Add the ground paste, salt, sugar, turmeric, red chilli and black pepper powder. Saute till dry. Serve with steaming hot rice.
