Jhinge Alu Posto...

Therefore here I present before you a very popular recipe of the Bengali households- "Jhinge Alu Posto", prepared to relieve all from the daily toil of excavating some distinct cuisine at the dinner table to please your taste buds. Jhinge Alu Posto...
Ingredients-
5 large Jhinge (Ridge Gourd), cut into thick strips
2 Potato, cut into wedges
2 tbsp Posto (Poppy seeds)
2-3 Green Chilli
1 Dry Red Chilli
1 tsp Kalojeera (Kalaonji / Nigella seeds/ Onion seeds)
1 tsp Turmeric powder
1 tsp Red Chilli powder
1 tsp Black Pepper powder
Salt and Sugar to taste
Mustard Oil
Method-
Soak the posto in hot water for an hour. Then drain the water and put it in a grinder. Make a smooth paste and keep it aside. You can also grind the posto dry then make a paste with green chillies and water. Add oil in a kadai and wait until the oil is hot. Add kalojeera into the kadai and a dry red chilli and cook for 30 seconds until they crackle. Add the jhinges, potatoes, green chillies and cook it for 5-6 minutes in low flame. Cover the kadai and stir occasionally.
Add salt, sugar, turmeric powder, red chilli powder and black pepper powder and give a nice mix. Cover the pan and cook it for 2-3 minutes in low flame.
Add the posto paste and mix it nicely. Cover the pan and cook it in low flame until the oil comes out. Cover the pan and let it cook for a couple of minutes in low flame until the vegetables get tender. In the end, before removing from flame, pour 1 teaspoon Mustard oil and give a nice mix. Transfer the Jhinge Alu Posto into a serving bowl or on a serving plate. Serve hot with steaming rice, dal and enjoy the comfort meal of Bengal. You can also enjoy this with roti/parathas.
