Therefore here I present before you a very popular recipe of the Bengali households- "Pomfret Mach ar Jhal", prepared to relieve all from the daily toil of excavating some distinct cuisine at the dinner table to please your taste buds. Pomfret Mach ar Jhal-
Ingredients-
4 Pomfret washed and cleaned
2 Onion, roughly chopped
1 Tomato, roughly chopped
1 tbsp Ginger-Garlic paste
3-4 Green Chilli
1 Dry Red Chilli
1 tsp Cumin seeds
1 tsp Turmeric powder plus 1 tsp for marinating the fish
1 tsp Red Chilli powder
1 tsp Cumin powder
1 tsp Coriander powder
1 tsp Garam Masala powder
1/2 tsp Black Pepper powder
Salt and Sugar to taste
Mustard Oil
2 tbsp Coriander leaves for garnishing, chopped
Method-
Marinate the fish with salt and turmeric powder and keep it aside for some time. Next make a coarse paste of onion, tomato and 2 green chillies and keep it aside. Heat 2 tbsp of oil in a kadai on medium heat, when hot add the fish and fry for 3-4 minutes until golden brown. Strain and take it off the heat.
Add the rest of the oil in the kadai and temper with the cumin seeds and a red chilli. When they start to splutter add the chopped onion and fry till translucent. Then add the ginger-garlic paste and saute till the raw smell vanishes. Now add the onion-tomato-green chilli paste and saute on medium-high heat stirring for 4-5 minutes until the water is evaporated and you see oil seeping through the masala. Add turmeric powder, cumin powder, red chilli powder, coriander powder, black pepper powder, salt and sugar along with 2 tbsp of water and mix it well. Continue cooking on medium heat for 3-4 minutes or until you see the oil seeping through the masala. Now add 1 cup of water and bring it to a boil. Simmer for 2 minutes. Slowly slip in the fried fish along with some coriander leaves and garam masala powder and simmer for another 3-4 mins. Sprinkle some fresh coriander leaves and enjoy it with steaming hot rice.
