Biulir Dal/Urad Dal...

Food is not just a mean to satisfy our hunger, rather it serves as an art characterised by distinct techniques with a mix of specific culture. Various factors like local ingredients, traditions, and customs get involve in the process to create a unique dish. Therefore here I present before you a unique recipe of "Biulir Dal"  prepared to relieve all from the daily toil of excavating some distinct cuisine at the dinner table to please your taste buds. 
Biulir Dal/Urad Dal...
Ingredients-
Split White Urad Dal - 1 cup
Green Chillies - 4-5
Hing or Asafetida - 1/4 tsp
Mouri or Fennel Seeds - 3 heaped tsp
Ginger - 2" piece
Ada-Mouribata ( a wet paste of Ginger and Fennel Seeds) - 2 tbsp heaped of the prepared paste.
Water - 3 & ½ cups for boiling the Dal in pressure cooker and 1 cup later
Salt and Sugar to taste
Turmeric powder- 1 tsp
Red Chilli powder - 1/2 tsp
Black Pepper powder - 1/2 tsb
Mustard Oil                                             
Method-
Dry roast the Urad Dal till you get a fine roasted smell and about 50% of the lentils turn a light brown. Wash the roasted dal and soak it in lukewarm water for an hour. Soak it overnight to get it cooked faster.
Pressure Cook the Urad Dal with almost 3 times the water and a tsp of turmeric powder,red chilli powder,black pepper powder,salt and sugar for 5 whistles. If it's still not done,cook it more for a whistle or two. When it’s cooked,remove the lid and lightly mix it with a wire whisk. Do not mash it up. It may take 6-7 minutes to get done after the pressure build up.
Wet grind the fennel seeds and the ginger to a fine paste.
Heat mustard oil in a kadhai.
Add the slit green chillies and the asafoetida.
Add the wet paste of fennel and ginger.
Fry the paste for a little while, and when you get the sweet smell of the masala
add the dal.
Add about 1 cup of water and let it cook.
This is not a very thick dal so check the consistency accordingly.
Enjoy it with hot rice, alu posto and any bhajas (fried vegetable fritters) of your choice.
