Food is not just a mean to satisfy our hunger, rather it serves as an art characterised by distinct techniques with a mix of specific culture. Various factors like local ingredients, traditions, and customs get involve in the process to create a unique dish. Therefore here I present before you some very simple and popular recipes with the most favourite vegetable of the Bengali households - "Alu", prepared to relieve all from the daily toil of excavating some distinct cuisine at the dinner table to please your taste buds.



Alu Bhaja (Potato Fry)...              
Ingredients-                                                    
Oil                                                                    
2 Green Chillies, sliced into 4 pieces each  
3 medium Potatoes, boiled, peeled and cut into any shape of your choice                     
1 large Onion, finely chopped                        
1 teaspoon Turmeric powder                        
1 teaspoon Red Chilli powder                       
1 teaspoon Black Pepper powder            
Salt, to taste                                     
Method-
Heat the oil in a large kadai. When hot add the chillies and fry until it releases flavor into the oil. Add the onion to the pan and saute until the onions are soft and golden brown. Add the turmeric powder, red chilli powder and black pepper powder and stir well for a minute.
Add the potatoes to the pan and cook until golden brown, stirring to brown all sides, for about 5-6 minutes. Add salt, to taste. Mix well. Serve with hot rice and any Dal of your choice or roti,parathis and most preferably luchi.                                            
Note-                                                                
1) You can try the same recipe with poppy seeds, fresh green peas, egg, carrots, beans, spring onions and small prawns.
2)Skip the onions and prawns to make it veg.
