Daab Chingri...

Food is not just a mean to satisfy our hunger, rather it serves as an art characterised by distinct techniques with a mix of specific culture. Various factors like local ingredients, traditions, and customs get involve in the process to create a unique dish. Therefore here I present before you a very popular recipe of the Bengali households- "Daab Chingri", prepared to relieve all from the daily toil of excavating some distinct cuisine at the dinner table to please your taste buds. Let's try our hands on this special recipe today.




Daab Chingri...
Ingredients -
1 - Daab or Tender Coconut
6-7 - Jumbo Prawns/Shrimps
2 ½ tablespoons - Poppy Seed (Posto) paste
3 tablespoons - Mustard paste (Black and White, 50-50)
2-3 - Green Chillies
¼ cup - Coconut Flesh/Malai
⅓ cup - Coconut Water
1 teaspoon - Turmeric powder
1 teaspoon - Red Chilli powder
1 teaspoon - Black Pepper powder
2-3 tablespoons - Mustard Oil
Salt to taste
Pinch of Sugar
Ata Dough/All Purpose Flour Dough (To seal the top of the coconut.)
Method-
Step 1- 
Preparing the Daab/Green Coconut- 
Take a daab/green coconut and cut the top of it. Make slightly bigger round shape hole so that it will help while stuffing. Do not throw away the head part, we need to use this to seal while cooking. Now first drain the coconut water and keep it aside.
Afterwards, scoop out the flesh/malai of the daab/green coconut using a spoon and keep this also aside.
Step 2- 
Make a Fine Paste-
We need to make a fine paste using mustard seeds (black and white, 50-50 ratio), poppy seeds (posto), 1/3 cup of coconut water, salt (as needed), a pinch of sugar (optional), 2 green chillies, ½ teaspoon turmeric powder, red chilli powder and black pepper powder.
You can put all of them in a food processor and make the paste.
However for best result, you can make the paste of mustard seeds and poppy seeds (posto) separately. This will help you to make sure the mustard seeds paste & poppy seeds paste are perfect.
Afterwards, add the mustard seeds paste, poppy seeds paste, ⅓ cup of coconut water, salt (as needed), pinch of sugar (optional), 2 green chillies, ½ teaspoon turmeric powder in a food processor and make a fine paste.
Step 3- 
Prepare the Shrimp/Prawn-
Cut and clean the shrimp/prawn, marinate with salt, turmeric powder, red chilli powder and black pepper powder and keep for about 10 mins, then marinate with the paste made in step 2.
Step 4- 
Stuff everything inside the daab/green coconut and drizzle some mustard on the top and put 1-2 green chillies.
Place the top part of the daab/green coconut and seal it with dough.
Step 5- 
Put the daab/green coconut inside a cooker, add 2 cups of water, cook it for half an hour without the lid of the cooker.
Once you take out the daab/green coconut from the cooker, cool it for another 10 minutes then take out the dough and top part of the daab/green coconut carefully.
Your Daab Chingri is now ready to be served. Serve it hot with plain white rice.
